Smokey Bacon & Cheddar Grilled Cheese
Ingredients
- 2 slices Dempster’s WholeGrains Bread
- 3 oz of Extra Old Cheddar Cheese
- 3 slices of thick smoked bacon, cooked
- 1 Tbsp soft butter
- Fresh Pea Sprouts for garnish
Apple Butter Chutney
- 1 small apple diced
- 6 dried apricots, diced
- 4 dried prunes, diced
- ¼ cup water
- ½ cusp apple butter
- 1 tbsp white balsamic vinegar
- ½ tsp salt
Preparation
- For the apple butter chutney, combine apple, apricots, prunes and water in a small sauce pan over medium low heat. Cook fruit until softened. Add apple butter, salt & vinegar. Simmer 5-10 minutes or until liquid has evaporated
- Prepare sandwich. First spread chutney on bread slices, layer on cheddar cheese & cooked bacon. Butter both sides of sandwich and grill until browned and crisp and cheese is melted
- Garnish with fresh pea sprouts
Serving: Makes 1 sandwich
