Eggs Benedetto

Ingredients
1 Dempster’s English muffin
2 to 4 slices prosciutto thinly sliced
2 Fresh eggs
1 tbsp butter
4 tsp pesto sauce |
Preparation
- Melt butter in a hot skillet and add prosciutto slices.
- Brown prosuitto until crispy, then set aside.
- Poach eggs to desired consistency.
- Toast English muffin.
- Place the prosciutto slices on each English muffin.
- Top each muffin with a poached egg and drizzle pesto sauce
over top.
